The sea on the plate
On Via Martini in Iglesias our kitchen speaks mostly of the sea: raw seafood and oysters, hot and cold starters, fregola and spaghetti with clams and bottarga, plus a few Sardinian dishes from the land.

Al Ristò is our restaurant at Via Martini 30 in Iglesias, in the Sulcis-Iglesiente. The kitchen looks first to the sea, with a menu written in Italian and English: raw scampi, prawns and oysters, roasted razor clams, sweet-and-sour blue shark and a six-course tasting of starters that changes with the catch.
Pasta runs from spaghetti with clams and bottarga and Sardinian fregola with shellfish to grouper ravioli and, for two, lobster or crab linguine; culurgiones and a board of cold cuts and cheese cover the land. At lunch there is also a tourist menu of seafood first and second courses, chalked on the board by the door.
